Apple Cinnamon Bread

TGIF Guys! I cannot tell you enough that you must make this bread! You probably already have everything you need in your pantry! The only thing we didn't have were apples so we went to the garden and picked the best ones we could find! Adie of course picked an itty bitty one, ate two itty bitty bites and left it on the entertainment center! This bread will be your new go to for Sunday mornings, a little afternoon pick me up with a scoop of ice cream or to give to a few of your favorite neighbors! As much as I am still hanging on to Summer, Fall is quickly approaching and I might be a little excited for cooler weather and pumpkin anything!

This apple cinnamon bread is the easiest recipe which I love. Baked it this morning while making our usual smoothies and Adie was sneaking bites off the counter before they cooled which you will have to try a slice warm out of the oven! This bread is ahhh-mazing and the brown sugar cinnamon swirl is the perfect touch!




Apple Cinnamon Bread

1/2 cup packed brown sugar
1 1/2 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup milk
1 large apple, peeled and finely chopped

Preheat oven to 350 degrees.
Grease and flour a 9 x 5-inch loaf pan.
Mix brown sugar and cinnamon together in a bowl and set aside.
With  mixer, combine white sugar and butter until smooth.
Add eggs and vanilla and continue to beat on medium speed until combined.
Add flour and baking powder, then milk.
Pour half the batter into the prepared loaf pan.
Cover with half of the apples.
Pat apples into batter with the back of a spoon.
Sprinkle with half of brown-sugar and cinnamon mixture.
Pour the remaining batter over the apple layer; top with remaining apples and add more brown-sugar cinnamon mixture.
Pat topping into the batter with the back of a large spoon.
Bake for 50 minutes or until toothpick interested in the middle of the loaf comes out clean.
Cool in pan 10 minutes before transferring to a cooling rack.
