Table Talk : Guacamole

It's Tuesday already and since we are finally getting back into our routines (after two trips and piles of laundry) I thought I would share with you my guacamole story! I never tried guacamole one because it has avocados and two I never thought it looked good. Since I've known Eric he has repeatedly tried to get me to eat avocados, it's annoying :) but when my sisters came last month one night we made it to Chipotle for dinner and my twin made me try guacamole and I can't stop eating it. Won't stop either! It is stinking so delicious! The right chip and I'm gone, don't bother me I have guacamole to eat! Eric knows to bring some back now every time we do a Chiptole run because the kids are overdue for bedtime and no one wants to fight that battle, in public! #AMIRIGHT

This recipe is simple and we always have these ingredients in the fridge so I say guacamole every night. So here's the recipe and it's perfect for any dinner, family party or even game night! And if you guys haven't bought Lauren Conrad's Celebrate book ... do it! I am so excited for everything in there! Especially the Birthday Party chapter on page 73 ... so fun! If you know me or have followed along for awhile you know I love birthdays and cannot celebrate my favorites enough.

For the Guacamole ||
2 ripe avocados
2 teaspoons lime juice
2 tablespoons cilantro (chopped)
1/4 cup red onion (finely chopped)
1/2 jalapeno including seeds (finely chopped)
1/4 teaspoon kosher salt
Directions ||
1. Choose the right avocado. It should feel squishy, yet firm, and be a nice dark green color on the inside.
2. Cut the avocado in half and remove the pit (carefully!)
3. Scoop the avocados and place in a medium bowl.
4. Toss and coat with lime juice.
5. Add the salt and using a fork, mash until smooth consistency is achieved.
6.Fold in the remaining ingredients and mix well.
7. Taste the guacamole (over and over) and adjust seasoning if necessary.
