Slow Cooker Chicken Chili

It feels like forever since I've shared a recipe and this one is good! The best part is I threw everything in the crock-pot and played with my two favorites! Not to mention it Eric loved, the leftovers are even better and cleanup is a breeze so you're not spending the rest of the night in the kitchen cleaning up. Soup is always a good idea unless you're three and a half and live off of quesadillas with strawberries. I love these soup bowls which go perfect for nights on the couch bundled up with a blanket and shoved full of ice cream! Hope you guys enjoy this as much as we have! :) Adie chose this picture to put on the blog and I just love her to a billion pieces ... she was an angel all day today and making her brother laugh is by far one of my most favorite things ever.

For the Soup
2-3 boneless skinless chicken
5 cups low sodium chicken broth
2 cans pinto beans, rinsed and drained
1 can white beans, rinsed and drained
1 small yellow onion, chopped
3 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoons garlic powder
salt and pepper to taste
8 ounces cream cheese, softened
1 cup sour cream
handful of chopped cilantro
toppings: shredded cheese, sliced avocado, limes for squeezing

1. Add chicken, broth, beans, onion and seasonings to slow cooker. Cover and cook on high 2-3 hours or low 4-5 hours.
2. About 30 minutes before serving, add cream cheese. Cover and cook another half hour.
3. Uncover, stir to mix cream cheese into soup. Taste, add salt and pepper to taste as needed. Stir in sour cream, chopped cilantro. Serve hot and top with shredded cheese and avocado slices if desired.

I am constanly adding things to my online cart to my favorite places to shop and Crate and Barrel's new arrivals are just what we need. I am loving the tacolicious cookbook because who couldn't eat tacos every night! (enter dancing girl in red dress emoji here) I so could and chicken enchiladas ... I think I craving Cafe Rio which is so funny because Adie says let's got here all of the time but she doesn't understand it's eight and a half hours away! So worth the drive! I don't drink tea but that stinking cute keddle is perfect for making hot chocolate. I don't really keep too much on our kitchen counters because clutter makes me crazy but the utensils crock is a must! I know exactly where I would put it too :) ha! I have this cutting board and love it so I think that round one would be even better and would also make a perfect tray for dinner at our new table. 

That chair just went on sale and I am so excited to put it in our fireplace room and that pillow just screams sunshine Spring to me! Cannot wait. I told Adie her summer schedule was preschool and beach , we are both pretty stoked about it! Maybe not the preschool part for me, I am literally dreading it but then excited for her and then I just might bawl! There's always retail therapy! XO
