Strawberry and Cream Mini Pancakes

Strawberry and Cream Mini pancakes topped with fresh strawberries, whipped cream and maple syrup. Perfect for your little mini or a fun brunch with the girls! I love breakfast and now with two little babes I drink a Dr. Pepper and call it good but with the best pancake recipe ever and them being mini every day can be a little more fun. Adie told me today they were delicious which is a huge win for us! Pancakes remind me of my Dad and wish we could have more breakfast together! You can even keep the batter in the fridge and make fresh mini pancakes every morning with your favorite toppings! We had some left over whipped cream and thought it would be perfect to get our morning started! Breakfast after all is the most important meal of the day!

Strawberry and Cream Mini Pancakes

1 egg
3 teaspoon baking powder
1 1/2 cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 teaspoon vanilla
3 tablespoon butter
1 1/4 cup milk

Whipped Cream
1 cup (2 sticks) butter, softened
2 teaspoons vanilla extract
1 teaspoon almond extract
32 ounces confectioner's sugar, sifted
2 tablespoons 2% or whole milk
pinch salt

Add dry and wet ingredients, mix with hand mixer on medium-high until well blended, do not over mix.
Preheat the griddle, spray with non-stick spray. Pour 1 tablespoon of batter for each pancake. Cook on low-medium heat for about 1-2 minutes. When batter starts to bubble flip and cook for another 1-2 minutes until golden brown.

Whipped Cream
Beat butter in bowl with hand or stand mixer on medium-high speed until light and fluffy. (about 3 minutes)
Add vanilla and almond extract.
With mixer on low, slowly add in confectioner's sugar, milk, and salt: frequently scrape sides and bottom of bowl.
Once incorporated, whip frosting for at least 3 minutes on medium high to high. (I mixed for 7 minutes)
If frosting is too thick to spread, gradually beat in additional milk
Store in refrigerator up to 2 weeks. Rewhip before using, add a little milk if needed. 

Decorate: Serve pancakes with whipped cream, fresh cut strawberries, sprinkled with crushed walnuts and drizzled with maple syrup! YUM!
