Pumpkin Brownies with Whipped Vanilla Buttercream

I didn't start eating brownies until like six months ago and I have been missing out! You find the perfect recipe or even boxed brownies and you can eat them for days or least I can! My favorite way to eat them is with ice cream and I have found my new favorite obsession! Not whipped cream since that's always been a must and lots of it! But that pumpkin frosting is perfection especially during Fall! You can even scoop some on your perfect golden waffle, my favorite recipe here and literally add it to anything! These pumpkin brownies are chocolaty, the pumpkin frosting is perfection and addictive topped with smooth yummy buttercream, perfect way to end the week or even start!



Pumpkin Brownies with Whipped Buttercream

Pumpkin Frosting
1/2 cup unsalted butter, room temperature
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1 tablespoon pumpkin puree
1 1/2 cups confectioners sugar

Whipped Vanilla Buttercream
1 cup (2 sticks) butter, softened
2 teaspoons vanilla extract
1 teaspoon almond extract
32 ounces confectioner's sugar, sifted
2 tablespoons 2% or whole milk
pinch salt

Pumpkin Frosting
With a hand or stand mixer, beat softened butter for 2 minutes.
Add pumpkin pie spice, vanilla extract, pumpkin puree, and confectioner's sugar until you reach your desired consistency. (I did for 2-3 minutes on high for a light and airy frosting)
When ready to assemble dessert, spread frosting over cooled brownies.

Whipped Vanilla Buttercream
Beat butter in bowl with hand or stand mixer on medium-high speed until light and fluffy. (about 3 minutes)
Add vanilla and almond extract.
With mixer on low, slowly add in confectioner's sugar, milk, and salt: frequently scrape sides and bottom of bowl.
Once incorporated, whip frosting for at least 3 minutes on medium high to high. (I mixed for 7 minutes)
If frosting is too thick to spread, gradually beat in additional milk
Store in refrigerator up to 2 weeks. Rewhip before using
