Creamy Chicken Chili

I cannot believe it is already September! It's my birthday month :) not that I want to be any older but I absolutely love birthdays and we celebrate big! The weather has been cooling off here and by cooling off I mean in the eighties! Fall happens this month and that means soups, pumpkin anything and cute comfy sweaters happen on repeat at our house! I love snuggling up and eating warm soup with a favorite movie! This soup instantly became a favorite when a friend of mine gave me the recipe years ago! We make it every year, the leftovers and how easy it is to throw together is even better! And let's talk about these stinking cute soup bowls from Crate and Barrel! I love how fun they are for soup night and not to mention a must for ice cream!


Creamy Chicken Chili

1 pound boneless, skinless chicken, cut into 1/2 inch cubes
1 medium onion, chopped
1 1/2 teaspoon garlic powder
1 tablespoon oil
2 cans (15 oz.) Great Northern Beans, rinsed and drained
1 can (14 oz.) chicken broth
1 can (4 oz.) chopped green chilies
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy cream or whipping cream

In large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink.
Add beans, broth, chilies and seasonings.
Bring to boil, reduce heat and simmer uncovered for 20 minutes.
Remove from heat, stir in sour cream and heavy cream. Garnish with cilantro if desired.
Makes about 6 servings
