Chicken Fajita Bake

Everyone that knows me knows I love good Mexican food and could literally eat it every day all day. Hashtag chips and salsa! But this dish is ahhh-mazing and I will probably make it once a week! I mean it. The chicken came out juicy, the peppers were tender and crunchy and the cheese made it perfect! My favorite part about this dish is how easy and quick it is to throw together! Running after a three-year-old and snuggling my little boy the last thing I want to do is spend all evening in the kitchen. The easiest weeknight dinner you will make this week!




Chicken Fajita Bake

3-4 boneless skinless chicken breasts
2 tablespoons fajita seasoning
3 bell peppers in assorted colors, deseeded and thinly sliced
1 white onion, peeled and thinly sliced
2 tablespoons olive oil
1 cup shredded Mexican blend cheese

Trim chicken breasts then lay them in a glass baking dish
Sprinkle the fajita seasoning over the top of the chicken breasts to taste
Lay your thinly sliced peppers and onions on top of the chicken breast, spread out evenly 
Drizzle olive oil over the peppers and onions
Sprinkle cheese over peppers
Bake at 375 degrees for 35 minutes or until chicken is cooked through and juices run clear

*serve as is or with rice or your favorite tortillas
