Buffalo Chicken Lettuce Wraps

Sunday already?! This week has seriously flown by with a very independent toddler who wants to stay up way past her bedtime and the sweetest little newborn who couldn't be any more perfect! Things are crazy, way off schedule, our usual routine is nonexistent and that's why this lettuce wrap is perfect in our house! It literally takes minutes to make and the leftovers are just as amazing! I love that this recipe is a little bit spicy and a lot healthy! I have been trying to eat healthy with the occasional bag of cookies and this recipe is my new go to. I will make this in the beginning of the week since towards Friday I am so done with cooking; that it's so nice to be able to grab something healthy out of the fridge instead of the alternative. 

Perfect for an afternoon with the girls by the pool watching our little babes! These are a yum twist on the traditional buffalo wings. The spicy chicken, the crispness of the lettuce and celery, the creaminess of the blue cheese, all pulled together makes for the perfect appetizer or entree for lunch. And I cannot get enough! These are fun for any game night or even at your next party and they will for sure be a favorite!

Buffalo Chicken Lettuce Wraps

2 large chicken breasts, cooked and shredded/chopped
2 tablespoons butter
1/2 tablespoon olive oil
1/2 cup Franks Wing Sauce (any buffalo sauce)
1/2 teaspoon celery seed
pepper to taste
1/2 cup thinly slice celery
blue cheese crumbles
ranch dressing
2 heads of lettuce
green onion (optional)

In a large pan, cook and shred your chicken. (I cooked my in a pan with 1/2 cup water, shredding as it cooks. The water should cook off by the time you are done, if not drain. I chopped the chicken in the ninja instead of shredding it.)
Keep the pain on medium heat. Stir in butter and olive oil. 
Add Franks Sauce, celery seed and pepper to taste. Once sauce begins to be bubbly, remove from heat. Add thinly sliced celery.
Spoon into lettuce leaves, sprinkle with blue cheese and drizzle with a little ranch dressing. 
Serve immediately while chicken is still warm! Yum!
