Tropical Sunshine Smoothie



Happy Memorial Day! I love this day for so many reasons. One, so blessed to be spending time with my two almost three favorites because of the brave! Two, the pool is always ready for cannonballs and laughs. Three, it feels like summer without being summer and that totally gets me excited! Four, yummy drinks always happen along with BBQ's with friends and family! Today we're celebrating a birthday, having one of the first BBQ's of the season and getting ready for our little stud that we finally get to meet on Friday! 

Let's talk about number four; DRINKS! I love that this smoothie was so quick to throw together to make an afternoon that much more fun! Mangos, pineapple, bananas, orange juice and a little toast of coconut will rock your summer I promise! I don't like mangos so if you don't either, no worries, smoothies and mangos just work! This just takes me somewhere tropical sip after sip and I know this will be a favorite all summer long! 





Tropical Sunshine Smoothie

2 cups frozen mango cubes
1 cup frozen pineapple chunks
1 ripe banana
1/4 cup orange juice
1 cup water
1/4 cup original Greek yogurt
1/4 teaspoon coconut extract

Toast coconut in oven at 350 degrees for about ten minutes. 
Add all of your ingredients to blender and smooth! Add more orange juice or water if smoothie is too thick to blend, blenders vary!
Sprinkle toasted coconut on rim of pineapple and pour smoothie into pineapple and add garnish! add the lime in the coconut  pineapple ... I think that's how the song goes :)
Enjoy by the pool because it will take you straight to vacation time with your favorites!
