Chicken Tacos with Jalapeno Ranch Sauce

I literally cannot take the rain anymore! I need some sunshine and getting my hair done (finally) totally makes up for it today but this last month has been nonstop cloudy rainy days! Looking forward to a fun Memorial Day weekend with my two favorites. It will be our last weekend as a family of three and I am so ready to take on the adventures of four! With having a newborn at home and a super active toddler running around the house and a Hubby who is always hungry these tacos are going to be my go to, they are the quickest ever to make and taste like you were in the kitchen for hours! Which is my favorite part!

I love that I can quickly throw this together and enjoy dinner with my family and the cleanup is a breeze. I love adding a little spice to anything I eat and this jalapeno ranch sauce is perfection! The sour cream, fresh jalapenos, cilantro and lime juice is so refreshing and you could even use it as a dip for Memorial Day coming up this weekend and you won't be disappointed!

Chicken Tacos with Jalapeno Ranch Sauce

6 mini (4 inch) corn tortillas
2 pounds chicken
chopped romaine lettuce
chopped cabbage
roma tomatoes
cotija (or feta) cheese

Jalapeno Ranch Sauce:
1 16oz. container of light sour cream
1 package of ranch dressing mix
3 fresh jalapenos, seeded
1/2 cup cilantro
1 lime, juiced

In a blender add your seeded jalapenos. Blend a few times just until the jalapenos are broken up into chunks. Add cilantro, blended a couple times until jalapenos and cilantro are broken up.
Add sour cream, ranch mix and lime juice. Blend until mixture is all incorporated. 
Refrigerate and serve chilled. I think it tastes even better the next day since the flavors really had time to meld together but it can be served immediately. 
Cook chicken to your liking, I added a few spices and threw it on the skillet until completely cooked.
Warm the tortillas over medium heat for 30 seconds on each side on a grill or skillet. Top with chicken, tomatoes, lettuce, cabbage and jalapeno ranch sauce. Sprinkle cotija cheese and enjoy!
