Steak Tacos with Avocado Cilantro Sauce

Everyone that knows me knows I love Mexican food and could totally eat it every day and we wont even talk about chips & salsa. With Cinco de Mayo next week these tacos will be a must and I cannot wait to eat my weight in chips & salsa. I always think too a cold cola or in my case a Dr. Pepper is a perfect match to any Mexican dish. Enchiladas are my favorite but these tacos just might be my new favorite with that avocado cilantro sauce. All together these tacos are full of amazing tastes and textures, but so light and perfect for a hot summer's day spent by the pool. This recipe will have you eating in thirty minutes or less which I am all about with a toddler, hungry Hubby and baby on the way, I don't want to spend my entire night in the kitchen cooking plus clean up. 

Steak Tacos with Avocado Cilantro Sauce

2 medium beef steaks
8 medium soft tortillas
1 avocado, chopped in small pieces
1 cups chopped tomatoes
1 cup lettuce, roughly chopped
1/2 cup crumbled feta cheese
1 lime, cut into wedges

Avocado Cilantro Sauce:
1/2 cup sour cream
1 ripe avocado, pitted and skinned
1/4 cup cilantro chopped
juice of 1 lime
1 jalapeno, chopped and seeded
salt, to taste

Grill the steaks to your liking
While grilling your steaks, make the avocado cilantro sauce. Combine all of the sauce ingredients in a blender, 
pulse until well blended.
Slice steaks your favorite way, I like them chopped or you could cut in slices.
To assemble tacos, start with placing some steak on a tortilla, topping tacos with avocados, tomatoes, lettuce and feta cheese. Finish by drizzling the avocado cilantro sauce and sprinkle with some fresh lime juice.

You could make these tacos with chicken which would be perfect with the avocado cilantro lime sauce to change things up and if you eat them as much as we do then you won't get bored! I always say yes to Mexican food and these tacos are a for sure yes and perfect for any Cinco de Mayo celebration or Tuesday! I cannot wait to make them again and cheers to fiestas and siestas!
