Minted Pineapple Lime Agua Fresca

Nothing screams summer more than a refreshing drink and lots of sunshine! Who else loves a good Cinco De Mayo celebration?! Any excuse to make a Tuesday just a little bit more fun and serve drinks everyone will love. This drink is the perfect mix of pineapple and lime with a kiss of mint that will go perfect with these tacos and all of your friends and family! Adie loves a good salsa and I always call her my little caliente because she loves everything with a little spice just like her Momma. Which this drink will go perfectly with salsa, guacamole or even just sipping by the pool. Cheers to chips and salsa! You guys will love it and totally make it your own, try adding a little sparkling water or even club soda for those summer afternoon lazy days!

What You'll Need:

1/4 cup sugar
small bundle of fresh mint
2 cups pineapple juice
2 1/4 cups water, divided
1/4 cup lime juice

1. Add sugar and 1/4 cup water in a small saucepan. Bring to boil, remove from heat and add  fresh mint.
2. Cover and let sit for about 30 minutes and strain the syrup.
3. In a pitcher mix the cooled syrup, pineapple juice, 2 cups water and lime juice.
4. Serve over ice [crushed is my favorite] or even frozen pineapple juice.
5. a little something extra ... add a sugar rim for fun
