Weekend + Fiesta Dip

I think weekends are made for fun and really every day should be weekend fun! I've decided that on Saturdays its me and my girl days to do something super fun until Daddy gets home! We haven't been outside too much with the air quality being so poor but Saturday was beautiful so we headed to our favorite mall and have you guys seen Shabby Apple!? Love all of their skirts and the best part is buying your usual size and being five months pregnant! I have been drooling over this cutting board (I know, cutting board) but I love everything about it and picked it up from Crate and Barrel which makes me want everything in there every time we shop! Window shopped at Z Gallerie and found this beautiful painting that would rock our little place! After a few stores in the mall we went to Cheesecake Factory for lunch and I forgot how much I love their Caesar Salad! Delish and just spending time with my girl was exactly what this Mamma needed! She was so fun and thinks we need to get Eric anything purple for his birthday coming up next month and still wants to name baby brother Barbie!!

I have been trying a few new recipes that I found on Pinterest (you can follow here) and was making a new favorite after being in the kitchen for four hours! I made something a few days before that spilled on the bottom of the stove and so when I went to preheat the oven it literally smoked the house out! Adie even ran and got a pillow to help fan out the place because the fire alarm is ear piercingly loud! So after we cooled the oven out Eric cleaned it and we reheated it and got to work on this Red Pepper Tortellini Soup that will be a favorite forever. But I am not a cook/chef by all means but pealing a red pepper after you baked it should be a lot easier than which seemed like forever. But the nine o'clock dinner was well worth the wait especially because I whipped this delicious dip up to snack on and it is so healthy which is a double win in my books!

I found this dip from Buns in my Oven (so I totally had to snap a shot of our little stud) and will totally be my go to snack which is packed with protein and flavor! It's super easy to make and the only thing you wait on is the eggs to boil and I think it would be perfect on a toasted piece of bruschetta bread. I used jalapenos instead of green chilies since I need anything spicy this pregnancy! This dip is perfect for that afternoon hungry and even for the Super Bowl coming up!

4 hard boiled eggs
2 tablespoons smashed avocado
2 tablespoons chopped cilantro
1 tablespoon minced onion
1 tablespoon diced green chilies or jalapenos
1 tablespoon 0% fat Greek yogurt
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon cumin
tortilla chips, for dipping

Chop the boiled eggs into small pieces. Add to a small bowl with the rest of the ingredients and stir to combine.
Serve with tortilla chips for dipping or wrapped in a soft flour tortilla.
