Hot N' Sweet

It's finally that time of the year that my Husband looks forward to for months! It's the 4th of July and it's almost time for good BBQ's and FIREWORKS! At your BBQ this summer bring the most talked about anything! SALSA! I absolutely love salsa. It might be because I am from Arizona and we could seriously eat it for breakfast, lunch and dinner. It's healthy right?! You can never go wrong with chips and salsa at any BBQ or anywhere! It is seriously simple and very little to clean up which in our house is a huge bonus. Make sure you have lots of chips because you will not be able to stop.

One thing to know is that all of the ingredients are just approximations and no two batches end up the same. Don't be afraid to tweak the flavor based on what you like.

The Best Salsa Ever Ingredients:
  • 1 habanero pepper
  • 6 jalapeno peppers
  • 6 serrano peppers
  • 1 medium white onion
  • 1 bundle of green onions
  • 1 bundle of cilantro
  • 2 cloves of garlic
  • 6-8 medium sized tomatoes
  • 1 large can of tomato sauce (I use Hunts)
  • 2 limes
  • Salt & Pepper

1. In a small pot lightly salted water boil:
- 1 habanero
- 3 jalapenos
- 2 seranno peppers

After they are soft drain the water and blend until smooth. Then you can just set aside to let cool. While all of that is cooling

2. Chop: (this is when you can determine how chunky you want your salsa to be)
- 1 medium white onion
- Some green onion
- 1 bunch of cilantro
- 3 fresh jalapenos
- 3 fresh serrano peppers
- a clove or two of garlic
- 6-8 medium sized tomatoes

3. In a large bowl mix chopped ingredients with cooled mixture from the blender. Add tomato sauce and the juice from your limes, and add salt and pepper to taste.

4. Eat with your favorite tortilla chips!

Hubby approved Strawberry Lemonade Ingredients:
  • 1 cup sugar
  • 1 cup of water
  • 1 pint fresh strawberries
  • 1 cup fresh lemon juice - about 8 lemons
  • 4-6 cups cold water

1. Make a simple syrup by combining the sugar with 1 cup of water in a saucepan. Place over medium heat and heat until the sugar in completely dissolved; swirl the pan occasionally. Let cool.

2. Once the simple syrup has cooled, puree strawberries in a blender with ½ cup water.

3. In a large pitcher, combine strawberry puree, simple syrup and lemon juice.

4. Add 4-6 cups of cold water.
The amount of water you use will depend on your taste, so add as little or as much as you want to achieve your perfect sweet/tart balance.

5. To add sugar on the rim all you do is wet the rim and dip in a pile of sugar. So easy and tastes good too.

6.Serve over ice. If desired, garnish with fresh strawberries and lemon slices. I do it because it looks super stinking cute!
